Ingredients

  • 2 cups oat groats—I use organic from a bulk bin at a local natural food store
  • 3 1/4 cups boiling water
  • 1/2 teaspoon salt, optional

Rinse and drain the oats in a colander. Put into the cooking pan of the Instant Pot. Add 3 1/4 cups of boiling water and salt, if using. Stir. Cover and set to 5 minutes on high power. Let steam naturally release for 2 hours. In other words, set and ignore for a couple of hours.

Uncover when finished and serve, or fluff with a large serving fork and turn onto a large plate and let it cool before storing.

I make this once a week. For my daily oatmeal this is what I do: Spoon out 1/2—2/3 cup cooked groats into a microwave safe bowl. You can use a small sauce pan and heat on the stove if you prefer. Cover lightly with unsweetened soy or other plant milk. Heat 2 minutes in the microwave (or bring to a simmer in a pot). Stir in 1 1/2 tablespoon of a mixture of ground flax seed, chia seed, and hemp hearts (2:1:1) which thickens the oatmeal mixture, and a heaping 1/2 teaspoon of turmeric, ginger, and cinnamon (2:1:1). Over this I add fruit, usually 1/2 sliced banana and 2/3 cup of mixed berries. Pour in a bit of almond milk, and a sprinkling of toasted sliced almonds finishes it. Lately I’ve stirred in home grown sprouts before adding the fruit.
