Ingredients

  • 1 small onion, chopped
  • 1/2 cup finely chopped carrots
  • 1 jalapeno pepper, seeded and finely chopped (optional)
  • 2 1/2 cups cooked brown or green lentils--I often use the 16 oz Trader Joe’s Ready To Eat Steamed Lentils
  • 14 oz can diced tomatoes, fired roasted and low sodium is best
  • 1 cup corn--I use frozen fire roasted
  • 1/4 to 1/2 cup vegetable broth, depending on how thick you like your taco filling
  • 2-3 tablespoons Taco Seasoning Blend—I use Trader Joe’s, or Kinder’s organic Taco Blend
  • Available on Amazon or Costco

In a medium to large skillet, dry saute the onion, carrot, and jalapeno to soften and brown slightly, adding a bit of water or broth to prevent sticking. Repeat this until lightly browned.

Add the remaining ingredients and mix well. Cover and cook for 15-20 minutes, stirring occasionally.  Taste and adjust seasonings. Freezes well.

Use this yummy filling for taquitos, tacos, or tostadas.  

 

For Air Fried Taquitos: 

Pre-heat to air fryer to 375 F.

Spoon a couple of tablespoons on to the base of softened tortillas. Over filling makes them soggy. Soften 4 tortillas at a time between 2 saucers in the microwave for 25 seconds, or heat one at a time in a dry skillet until soft. Roll tightly away from yourself and put on air fryer tray or cookie sheet seam side down.  May roll and make a full try to air fry a bit later. 

Air fry approximately 7 minutes.  Watch carefully and do not over brown.
