Ingredients

  • 1/2-1 cup peanut butter with about half as much date syrup or honey added to stir both together easily
  • OR
  • 1/2 cup-1 cup PB2 powder, add about half as much date syrup or honey to make a thick liquid
  • 1/4-1/2 c oat flour (rolled oats turned into flour in blender), or ½ oat flour and oat bran
  • 1/4 -1/2 c rolled oats
  • 1 tsp vanilla
  • Pinch of salt.

In a small bowl, mix the peanut butter or PB2 powder and sweetener, should be a very thick liquid. Add all other ingredients. Adjust the wet and dry ingredients to allow you to roll into little balls in your hands.  If you’d like, roll in shredded coconut, shaved dark chocolate, cocoa nubs, or finely chopped nuts, chia seeds, or whatever you would like.

Place in freezer for a few hours. These energy balls are great in lunches, as a snack, or a pick me up with hot tea or coffee.
