Ingredients

  • 1 cup cooked and drained black or pinto beans
  • 1 small tomato, chopped
  • 1 large avocado, chopped
  • ½ Persian cucumber, chopped, may substitute 1/2 cup seeded greenhouse cucumber
  • ¼ red onion, finely chopped
  • 1 green jalapeno pepper, seeded and finely chopped (optional)
  • 1 cup mango, peeled and finely shopped (optional)
  • The juice of a large lime, or medium lemon
  • Finely chopped cilantro (to taste)—I missed this in my video. It is worth adding.
  • Sea salt and black pepper (to taste)
  • Corn tostadas
