Ingredients

  • 28 oz can diced tomatoes in tomato juice
  • 15.5 oz can red kidney beans, drained
  • 2 lb bag frozen Italian blend vegetables
  • ½ lb bag frozen sliced okra or green peas
  • ½ lb bag frozen collard greens
  • 2-3 teaspoons Cajon seasoning mix
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon thyme
  • Salt and pepper to taste

Jeff’s Fast Food Series is based on the concept that with canned and frozen ingredients kept on hand, as well as Instant or boil-in-the-bag brown rice, a healthy delicious meal can be on the table in just 15 minutes. Frozen vegetables are frozen directly out of the field and retain their nutrients well. Because there is no waste, they can also be well priced.

Mix all in a large pot, bring to a boil on high, then lower heat to a simmer for 10 minutes. Taste and adjust seasoning to your liking. To speed up cooking, vegetables may be allowed to defrost.

Serve over brown Instant, boil-in-the-bag, or pre-cooked and microwaved brown rice. Plenty on its own, or with a crisp green salad and your favorite dressing.
