Ingredients

  • 1-pound small whole okra
  • Salt to taste
  • Pepper and/or other seasonings to taste (see below)
  • Olive oil, 1/2 teaspoon, optional

Cooked this way okra loses its sliminess and develops a very appealing flavor. Eat hot or cold.

1. Start with the smallest okra you can find. Larger tends to be woody which isn’t as appealing.

2. Wash the okra. Trim off any excess stems, but do not cut into the pod itself. Put in a large bowl.

3. Preheat the oven to 450 F. or set Air Fryer to 425 F.(Breville Air) or 390 F. traditional, (if small cook in two batches if necessary).

4. Spray oil into hands and toss the okra in the bowl to disperse oil and give a slight sheen. Add seasonings and toss well. For oven and air fryer spread in a single layer on a shallow tray and bake approximately 15 minutes (probably less for air fryer), stirring every 5 minutes, until okra is browned on all sides.

Note: Jazz these up with spice blends such as garam masala, curry powder, chili powder, creole seasonings, or whatever you like. Simple salt and pepper is delicious too.
