• 2 1/2 cups rolled oats
  • 1/2 oat flour [you can make your own in a blender until rolled oats are a powder]
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt, (optional)
  • 1 tablespoon cinnamon, more if you like
  • 1/2 teaspoon nutmeg
  • 4 ripe bananas, mashed
  • 1 medium/large apple grated, approximately 1 1/3 cup
  • 1/2 cup non-dairy (plant) milk
  • 2 teaspoons vanilla extract
  • 1/2 cup raisins—regular or golden, or use currents instead
  • 1/2 cup chopped walnuts, optional

Makes 12 muffins


Preheat oven to 350 F

In a large bowl combine and whisk together the dry ingredients

In a medium bowl combine bananas, grated apple, non-dairy milk, and vanilla and stir

Until well combined.

Add the wet ingredients to the dry and combine well. Fold in the raisins and walnuts, if using

If using a 6 muffin tin for large muffins cook 45 minutes. If using a 12 muffin tin, bake 35 minutes. Test for doneness.
