Ingredients

  • 1 bag of edamame

What a great way to boost the protein of any meal. For only 140 calories, 8 ounces of edamame pods has a whopping 12 grams of protein and 4 grams of fiber.

For this appetizer, purchase edamame as young soybean pods which is typically found in the frozen vegetable section of your market. I have purchased it at Trader Joes, and at Costco. Although Costco sells it in 6 pound bags—12 8-oz steamable bags—I recommend not cooking in plastic. Transfer the frozen pods to a bowl with a bit of water and a plate to cover and microwave for about 2 minutes, 30 seconds, or into a pot with an inch of water, and boil gently for 3 minutes. 8 ounces makes a nice appetizer for two, or a lunch meal for one.

To serve, offer in a bowl with my Favorite Asian Dipping Sauce. Provide another plate or bowl for the pods.

To eat: Hold one end of a pod with your fingers, dip into the dipping sauce and tap off the excess. Put the pod in your mouth and pull back out between your teeth to extract the beans. Enjoy!

 

Nan’s Favorite Asian Dipping Sauce-Vegan & Gluten Free

Makes approx. 3/4 cup.

1/2 cup low sodium Tamari, gluten free if desired (may use liquid aminos)
2 tablespoons date paste or maple syrup
1/2-1 tablespoon grated ginger, taste for preference
1 tablespoon Siracha (or other chili garlic sauce)
1 tablespoon rice vinegar, unseasoned
1 tablespoon toasted sesame seeds
1/2 – 1 teaspoon toasted sesame oil (optional)

Good with sushi, steamed whole edamame, spring rolls, steamed buns, etc.
