Tofu scrambles are a popular way to offer healthful tofu and a combination of vegetables. In this recipe, brown rice is added to the scramble to make it even more substantial. In addition, a Scramble Seasoning Mix (recipe included) punches up the flavor, can be made in advance, and makes enough for about 10 scrambles. This yummy and colorful tofu dish can be served for breakfast, lunch, or dinner—with toasted sprouted Ezekiel muffins, warm corn tortillas or, as featured in the video, served with whole roasted portobello mushrooms.

If roasting portobello mushroom, begin now. I roasted two at 375 F—after drizzling with Braggs liquid aminos, and a seasoning mix. Roast about 15 minutes on each side until soft and brown.
Heat a large nonstick sauté pan over high heat. Add onion and tofu and dry sauté until the onions become translucent and the tofu begins to turn golden. [At this point I also added the chopped stems of the portobello mushrooms.] Drizzle with a bit of water to deglaze the pan as the mixture begins to stick. You may do this a few times as the water evaporates. Don’t create a wet mixture though.
Stir in the red bell pepper, garlic, jalapeno, cabbage, and zucchini. Continue to saute, and cover for 3-4 minutes to cook more evenly. Uncover to stir, and check for dryness, adding a bit of water to deglaze again if necessary. Cook until vegetables become tender and tofu is more golden brown.
Stir in the brown rice and the Scramble Seasoning Mix, addition spice—such as Cajun seasoning, salt and pepper. Taste and adjust seasoning. Cover and heat through.
Remove from the heat and garnish with the chopped cilantro, if using.
Scramble Seasoning Mix (Adapted from Dr. N Barnards Program for Reversing Diabestes)
1 cup nutritional yeast flakes
5 tablespoons, plus 1 teaspoon onion powder
4 teaspoons curry powder
4 teaspoons ground turmeric
4 teaspoons ground cumin
2 teaspoons smoked paprika
4 teaspoons kosher salt
1-2 teaspoons ground pepper
Blend all ingredients together and store in a covered glass jar.
