• Watermelon, seedless is the easiest to work with
  • Cucumber, Persian=halved and chopped; regular=peeled and seeded, then chopped
  • Fresh mint, chopped
  • Lime juice and zest

Cube the watermelon and cucumber. Add fresh mint and lime to taste.
Chill before serving.


Chef AJ’s Note:

I like to use twice as much watermelon as cucumbers.
The amount of lime juice and mint is to taste.
If you keep this more than a day or two and it gets soggy, try blending it with ice for a refreshing slushy.
