Ingredients

  • 1 cup walnuts or other nuts of choice
  • 1 tbsp water
  • 2 tsp vanilla extract
  • 1 cup Medjool dates, de-seeded and chopped
  • 1/2 cup desiccated or shredded coconut
  • Dash of peppermint extract
  • 1/2 cup raw green pumpkin seeds or shelled pistachio nuts (or any seeds/nuts you choose)

Makes approximately 12 small balls

In food processor or high speed large blender grind pumpkin seeds or shelled pistachio nuts finely. Set aside.

Place all remaining ingredients in the food processor or blender, and blend until combined. Stir down the ingredients as necessary to blend well.

Once the mixture is blended, scoop mixture out of the blender and roll into balls with hands. Roll the balls in the ground nut mixture. Bliss Balls can be made ahead and stored in the refrigerator or freezer.
