Ingredients

  • 6 cups broccoli florets, cut into bite size pieces
  • 1 apple, like Honey Crisp or Envy, cored and diced, or 1 cup grapes sliced
  • 1/3 cup currants, I added-optional.
  • 3/4 cup diced red onion
  • 1/4 cup each raw sunflower seeds and raw pumpkin or 1/2 cup walnuts, chopped (my addition)
  • 10.8 ounces silken tofu
  • 1 tablespoon lemon juice
  • 1-2 tablespoons apple cider vinegar—start with 1 tablespoon and taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon Dijon mustard
  • 1 tablespoon date sugar, or date paste or syrup; if desired, more to taste
  • 1-2 tablespoon plant milk, unsweetened--my addition—to add extra creaminess

Broccoli is a superstar superfood–especially raw. This flavorful combination of crunchy broccoli, crispy sweet apple, red onion, seeds and/or nuts is mixed with a healthy creamy, only slightly sweet, high protein dressing. No oil or dairy. You will love how this salad compliments many other dishes, and you will serve it often. It is reminiscent of a popular potluck favorite, without the heavy dairy dressing. I noted a couple of changes I made. This recipe is very versatile, so have fun with it.

In a medium bowl, mix together the broccoli, diced apple, red onion, currants (optional) and nuts or seeds.

In a blender, combine all the dressing ingredients:

10.8 ounces silken tofu
1 tablespoon lemon juice
1-2 tablespoons apple cider vinegar—start with 1 tablespoon and taste
1 teaspoon garlic powder
1 teaspoon onion powder
1 tablespoon Dijon mustard
1 tablespoon date sugar, or date paste or syrup; if desired.

Process until smooth and creamy. Taste and adjust vinegar and sweet if necessary.

Pour the dressing over the salad, and stir well to coat everything evenly.  Add a bit of plant milk if dressing is a bit thicker than you like.

Chill until ready to serve.  It lasts several days in the refrigerator, possibly more. Enjoy!
