Ingredients

  • 3/4 cup raw cashews
  • 1 cup water
  • 1 cup unsweetened plant-based milk (I prefer soy for the rich flavor and protein)
  • 5 garlic cloves, peeled
  • 2 tablespoons Dijon mustard
  • 2 tablespoons nutritional yeast flakes
  • 1 tablespoon vegan Worcestershire, (I like Robbie’s brand)
  • 1 tablespoon smoked paprika
  • 1/2 teaspoon sea salt or to taste
  • 1/4 teaspoon black pepper
  • 4 cups cooked whole-grain rice, pasta, or gnocchi, for serving. Use the amount of sauce that appeals to you.

No Oil & Gluten Free

Makes approximately 4.5 cups.

This wonderful sauce can be used with pasta, rice, gnocchi, or on baked potatoes. It’s rich earthy flavor comes from smoked paprika, garlic, Dijon mustard, and nutritional yeast.

This sauce was taken from the Smoky Mushroom Boscaiola recipe in Kim Campbell’s terrific cookbook, Plant Pure Comfort Food. In that recipe the sauce is added to a base of a ‘sauted’ sliced mushrooms.  See my video for ideas, or her book: https://a.co/d/0d9BXs0U

 Comfort food at its best!

In a high-powered blender, combine all the ingredients, except the pasta. Blend until smooth and creamy.  Use it over whatever you like.  I warm it slightly in the microwave, and store it for multiple uses in the refrigerator, often doubling the recipe.

Note: If blender is not high powered, like a Vita Mix, soak the cashews for several hours, then drain. This will help make them more creamy.
