Ingredients

  • 2/3 cup water
  • 1/2 cup fresh lemon juice (about 2-3 large lemons)
  • 1/2 cup sesame tahini
  • 1/3 cup brown rice syrup or maple syrup or date syrup
  • 3-4 tablespoons stone ground mustard, or whole grain mustard, or Dijon
  • 2 tablespoons Bragg Liquid Aminos, or tamari, or soy sauce
  • 2 teaspoons fresh minced garlic
  • 2 tablespoons fresh chopped Italian parsley, or curly parsley
  • Dash of Cayenne pepper

Chef John B. Nowakowski created this oh-so-good dressing at the Regis Health Spa, It is SO DELICIOUS that it became their house dressing during his 20 years as Chef there, as well as at his current Nowakowski Health Retreats. This versatile dressing goes on salads, falafel, steamed vegetables, nutrition bowls, as a crudites dip, and more. Weight Watchers even shared it with members as a ‘1 point for 1 tablespoon’ dressing.

Makes 1 pint, and keeps well in the refrigerator

In a blender or food processor combine all until smooth. Begin with 3 tablespoons of mustard, add more if you like a stronger flavor. I used 3 T.

Chill.

This dressing will last awhile in the refrigerator. If it separates, shake or stir.

If you like a more pourable dressing you may want to stir in more cool water after it sets and thickens.
