Ingredients

  • 2 whole bananas, very ripe
  • 1/4 cup chunky peanut butter
  • 1/4 cup apple sauce (make your own by steaming a sliced apple in the microwave & mashing)
  • 1/2 cup date paste, or other sweetener such as maple syrup
  • 1/4 cup cocoa powder
  • 1 teaspoon vanilla extract or vanilla bean powder
  • 2 cups, plus scant 1/4 cup, old fashioned roll oats
  • 1/4 teaspoon salt

Such a quick and easy way to create a tasty whole food plant-based cookie. These soft, moist, and chewy cookies are a nutritious way to enjoy an old favorite.

Makes 12 cookies.

Heat oven to 350 F. Line baking sheet with parchment paper to prevent sticking

Mash the ripe bananas in a large mixing bowl with a fork or potato masher. Add the peanut butter, apple sauce, date paste, cocoa powder, and vanilla. Whisk well to incorporate everything

Mix the salt into the oats, then mix into the banana mixture. Mix until well combined

Spoon the dough onto the parchment lined cookie sheet to create 12 cookies. Using a large fork, flatten a bit, then round out the edges.

Bake for 15-20 minutes. Remove from the oven and cool on a rack
