Ingredients: Small Yukon Gold potatoes (3-4 ounces each works best) left whole and not peeled.

Preparation: Bake (covered) or microwave potatoes until soft. Wet cooking methods like steaming or pressure cooking not recommended, the potatoes will stick). Press potato into a preheated non-stick waffle iron for 10-12 minutes until golden brown. If waffle iron doesn’t open easily without the potatoes sticking, close and cook a few minutes longer.
