Ingredients

  • 4-5 zucchinis (or yellow squash, depending on size
  • 2 1/2 cups chopped Roma tomatoes
  • 2 tablespoons Braggs Liquid Aminos
  • 1/3 cup lemon juice
  • 2 tablespoons diced onion
  • 2 tablespoons chopped garlic
  • .25 oz fresh basil, or a palm full
  • Salt and pepper to taste
  • 1-2 tablespoons cold pressed flaxseed oil (optional)
  • Nutritional yeast—my addition as a garnish

From Dr. Goldners new cookbook, Goodbye Lupus Hello Delicious. The recipes in her much-anticipated book fit the requirements for her Hyper Nourishment protocols. This healthy and raw dish is pretty and delightfully flavorful–a lovely lunch or dinner entrée or side. I especially enjoyed it with a dusting of nutritional yeast on top. Both the noodles and sauce keep in the refrigerator for several days.
